Allow only certain payment types based on the service

It would be great to be able to associate certain payment choices by service and not all payment types for all services. As an example, we have services for long-term clients that we would like to offer on-site payment and by Square and PayPal but we don't want to allow on-site payment for new or short-term clients because they tend to book and then not show up for their appointment. Right now if we offer on-site payment it has to be for all the services that we offer.

I don't understand why this is not a thing already. It's a very common case mainly, as the OP says, for onsite payments. It would be great to have a section on the bottom of each service in the "advanced settings" tab to inherit the payment method by default and then having some switches to enable or disable the payment methods you have configured.
